Kid Friendly Chia Pudding
I have always loved chia pudding as a snack or quickie breakfast for myself, so I was oh-so-happy to discover that my little guy shares the same affection for this easy-peasy overnight dish. I've tried several variations on the simple recipe that mainly involves chia seeds, non-dairy milk, and a sweetener of sorts, and they've all been a hit. In my experience coconut milk seems to work best for a more solid pudding, which texture wise my son seems to prefer. I sometimes add a spoonful of chocolate protein powder or raw cacao powder for taste, and I appreciate that the nutrient dense chia seeds keep his belly full until he eats his lunch.
